Ultimate Smoked Chicken Wings

You'll never eat wings another way once you've tried these wings. The key is not over cooking the wings, and resting before the searing step.
  • Chicken wings (or drums)
  • Blues Hog All Purpose Dry Rub
  • Blues Hog Chipotle Raspberry sauce
  • Your smoker or grill of choice

Set smoker of your choice to 250F. While heating prepare your wings. In a bowl lightly coat all your chicken with olive oil and add a generous few shakes of the rub. Toss the wings to coat evenly. Insert a meat probe into your largest wing, making sure to insert the probe into the thickest part of the meat. 

Smoke the wings until they reach an internal temperature of 160F. When they have reached 160F, Use a basting brush to coat the wings completely in Raspberry Chipotle Sauce. Remove from grill and cover in foil to rest before the next step. (Remember, when meat is removed from the heat it continues to cook, thats why it needs to rest!)

Increase temperature of smoker to high, or 500F. Once heated sear the wings until skin is crispy. 

Let cool and dig in!
